How do I manage my intenet E-mail with an Exchange Server?

Can we administer our own email system using SBS 2003 and Exchenge Server? In our office we have a machine running Windows Small Business Server 2003 and this includes MS Exchange Server. Currently our email is handled by a third party, though we use the server to do a final sort to individual staff of mail the third party send to us Can you tell me about the practicalities of taking it all in house. We own the domain name and I'm told we can 'point' the email to wherever we want. We'd need to distribute about 25 incoming email addresses by simple forwarding, allow access to about half a dozen email accounts via users email clients, and distribute the rest to our internal staff, including the use of a catch-all. We also have a major (and recently increased) problem with spam. Can you suggest a system or software to address this, whether we bring the email handling in house or not? Many thanks for your help.
